The foundational art of Wenzhou's dining table is governed by established culinary principles: "seafood-driven core; light oil and thin starches, precise knife skills; fresh and clean profiles, delicate without feeling thin; elegant and meticulously crafted execution." Encompassing over thirty cooking techniques, 46 featured items in the Chinese Culinary Compendium, and more than 250 structured recipes, Ou Cuisine represents one of Zhejiang's four major culinary pillars.

Its definitive technique is demonstrated in Three-Shred Beaten Fish Soup (Sansi Qiaoyu): coastal fish sliced thinly, dusted with dry starch, pounded into paper-thin sheets with a wooden mallet, blanched, and presented in broth alongside shredded chicken, ham, and mushrooms. Inscribed on the Zhejiang provincial heritage list in 2012 (fourth batch), its designated protection body is the Wenzhou Jinding Culinary Training School. Key inheritors include Zhou Xiong (provincial inheritor who founded Jinding in 1994 and has trained over 20,000 chefs), Pan Xiaolin (national master chef and former state-banquet culinary supervisor at the Great Hall of the People, chief editor of the Encyclopedia of Ou Cuisine, who established public training programs educating over 1,500 professional chefs), and Xiang Zhaohui (municipal inheritor elected president of the Wenzhou Ou Cuisine Artisan Federation in 2025, currently compiling a standardization manual for 67 core dishes).
